Tudor Apple Fritters

Gaze in wonder as I attempt to cook Tudor Apple Fritters. This recipe is taken from Thomas Dawson's The Good Huswifes Jewell from 1596. If you wish to recreate the wonders of Tudor Apple fritters then here is the recipe.

(Ye) Ingredients

  • Pint of ale (or Ginger Beer if you must)

  • Around ten apples

  • Four yolks of eggs

  • Saffron

  • Spoonful of cloves

  • Bit of Mace

  • Teeny bit of salt

  • Handful of sugar

  • Some suet

How to cook.

Mix the ale (ginger beer), eggs, saffron, cloves, mace and salt together.  Pour mixture into saucepan.  Warming this delightful mix until you get a bit of a batter going.

At this point you want to peel, core and create a series of sliced apple groats.

Then add some suet to mix.  

Observe the mixture until your apples turn a bit yellowy.  At this point remove apples from pan and then you may wish to add some sugar.

Eat and enjoy or heat and eat later.

 

This recipe originally came from Thomas Dawson's The Good Huswifes Jewell which was published late in Elizabeth I's reign in 1596.  I saw it in the rather excellent The Tudor Cookbook by Terry Breverton which is chock full of interesting recipes.
